Twice-baked potatoes are a decadent and satisfying dish, perfect as a side or a main course. This air fryer version simplifies the process, delivering crispy potato skins and a creamy, flavorful filling. Customize the toppings to make these potatoes your own!

Ingredients

  • 4 medium russet potatoes – The perfect size and texture for twice-baked potatoes.

  • 1 tablespoon olive oil – For crisping the skins.

  • ½ cup sour cream – Adds creaminess to the filling.

  • ½ cup shredded cheddar cheese – Sharp cheddar works best for a bold flavor.

  • 2 tablespoons butter – For a rich and smooth filling.

  • ¼ cup cooked and crumbled bacon – Optional, for a savory kick.

  • 1 teaspoon garlic powder – Enhances the flavor of the filling.

  • ½ teaspoon salt – Adjust to taste.

  • ½ teaspoon black pepper – Adds a hint of spice.

  • Chopped green onions or chives – For garnish.

Utensils Needed

  • Cutting board

  • Sharp knife

  • Spoon (for scooping)

  • Mixing bowl

  • Potato masher or fork

  • Pastry brush

  • Air fryer

Instructions

1. Cook the Potatoes

  • Wash and scrub the potatoes, then pat them dry.

  • Pierce each potato several times with a fork to allow steam to escape.

  • Preheat the air fryer to 390°F (200°C).

  • Rub the potatoes with olive oil and place them in the air fryer basket. Cook for 35–40 minutes, flipping halfway through, until tender when pierced with a fork.

2. Prepare the Filling

  • Allow the cooked potatoes to cool for 5–10 minutes, until safe to handle.

  • Slice each potato in half lengthwise. Carefully scoop out the insides, leaving a thin layer of potato attached to the skin for stability.

  • Place the scooped-out potato in a mixing bowl. Add sour cream, shredded cheese, butter, garlic powder, salt, and pepper. Mash the mixture until smooth and creamy.

3. Fill the Potato Skins

  • Spoon the potato mixture back into the potato skins, mounding it slightly.

  • If desired, top each potato with additional shredded cheese and crumbled bacon.

4. Air Fry the Stuffed Potatoes

  • Place the stuffed potatoes back in the air fryer basket.

  • Air fry at 375°F (190°C) for 8–10 minutes, or until the cheese is melted and the tops are golden.

5. Serve and Enjoy

  • Remove the potatoes from the air fryer and garnish with chopped green onions or chives. Serve immediately as a hearty side or main dish.
