Air Fryer Breakfast Egg Rolls


Combine your favorite breakfast flavors in a crispy, golden wrapper with these Air Fryer Breakfast Egg Rolls. Packed with scrambled eggs, savory sausage or bacon, and melted cheese, they’re a satisfying and portable way to start your morning. Plus, they’re quick to make and healthier than traditional fried egg rolls!



Ingredients

  • 4 large eggs

  • 1/2 cup cooked sausage crumbles or bacon bits

  • 1/4 cup shredded cheese (cheddar or your favorite)

  • 4 egg roll wrappers

  • Cooking spray or a small amount of oil

  • Optional: 1/4 cup diced vegetables (e.g., bell peppers, onions, or spinach)



Instructions


Step 1: Prepare the Filling

  1. Scramble the Eggs:

    • Crack the eggs into a bowl and whisk until fully combined.

    • Heat a non-stick skillet over medium heat and scramble the eggs until they’re just set. Avoid overcooking, as they’ll cook further in the air fryer.

  2. Mix the Ingredients:

    • Combine the scrambled eggs, cooked sausage or bacon, and shredded cheese in a bowl.

    • If using diced vegetables, sauté them lightly before mixing them in for added flavor.


Step 2: Assemble the Egg Rolls

  1. Prepare the Wrappers:

    • Lay one egg roll wrapper on a clean surface with one corner pointing toward you, forming a diamond shape.

  2. Add the Filling:

    • Place about 2 tablespoons of the egg mixture near the center of the wrapper. Be careful not to overfill to avoid tearing.

  3. Roll the Wrapper:

    • Fold the bottom corner over the filling, then fold in the sides. Roll tightly toward the top corner, sealing the edge with a dab of water to keep it secure.


Step 3: Air Fry the Egg Rolls

  1. Preheat the Air Fryer:

    • Set your air fryer to 370°F (190°C) and let it preheat for 3–5 minutes.

  2. Cook the Egg Rolls:

    • Lightly spray the egg rolls with cooking spray or brush with a small amount of oil for crispiness.

    • Place them in the air fryer basket in a single layer, leaving space between each roll.

    • Air fry for 8–10 minutes, flipping halfway through, until the wrappers are golden brown and crispy.


Step 4: Serve

  • Let the egg rolls cool for 2–3 minutes before serving. Enjoy them plain or with a side of salsa, hot sauce, or sour cream for dipping.

  • Sealing the Wrappers: Use a mixture of water and a little flour to create a stronger “glue” for sealing the edges.

  • Storage and Reheating: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 3–4 minutes to regain crispiness.

  • Freezing Option: Assemble the egg rolls and freeze them uncooked. Cook them straight from frozen in the air fryer, adding 2–3 extra minutes to the cooking time.
