Buffalo Style Air Fryer Pollock


Spice things up with this Buffalo Style Air Fryer Pollock. Coated in a tangy and spicy buffalo sauce, this crispy fish dish is a bold and flavorful crowd-pleaser, perfect for weeknight dinners or game day snacks.



Ingredients:

  • 4 pollock fillets (about 6 oz each)

  • ½ cup all-purpose flour

  • 2 large eggs, beaten

  • 1 cup panko breadcrumbs

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon smoked paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ cup buffalo wing sauce (store-bought or homemade)

  • 1 tablespoon melted butter (optional, for extra richness)

  • Cooking spray

  • Ranch or blue cheese dressing, for dipping

  • Celery sticks, for serving (optional)



Instructions:

1. Prepare the Pollock:

  • Rinse the pollock fillets and pat them dry thoroughly with paper towels.

  • If the fillets are thick, cut them in half for even cooking.


2. Set Up the Coating Stations:

  • Place the flour in one shallow dish.

  • Beat the eggs in a second dish.

  • In a third dish, combine panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.


3. Coat the Pollock:

  • Lightly dredge each fillet in flour, shaking off the excess.

  • Dip into the beaten eggs, ensuring the entire fillet is coated.

  • Press into the seasoned panko breadcrumbs, covering both sides evenly.


4. Preheat the Air Fryer:

  • Preheat your air fryer to 400°F (200°C) for 3-5 minutes to ensure even cooking.


5. Cook the Pollock:

  • Lightly spray the air fryer basket with cooking spray to prevent sticking.

  • Arrange the coated fillets in a single layer in the basket, leaving space between each piece for proper air circulation.

  • Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through. The coating should be golden brown and crispy.


6. Toss in Buffalo Sauce:

  • In a small bowl, whisk the buffalo wing sauce with melted butter (if using).

  • Once the pollock fillets are cooked, carefully toss them in the buffalo sauce until fully coated.


7. Serve:

  • Transfer the buffalo-coated pollock fillets to a serving platter.

  • Serve immediately with ranch or blue cheese dressing and optional celery sticks on the side.

  • Adjust the Heat: For milder spice, mix the buffalo sauce with honey or additional butter. For more heat, add a dash of cayenne pepper.

  • Crispier Coating: Lightly spray the tops of the breaded fillets with cooking spray before air frying.

  • Alternative Coating: For a gluten-free option, use almond flour and gluten-free breadcrumbs.
