Infused with creamy coconut milk and bold Thai spices, this Air Fryer Thai Coconut Grouper Fillet recipe is a quick and flavorful dish. Perfectly air-fried, it delivers a taste of Southeast Asia right to your table.



Ingredients:

  • 4 grouper fillets (about 6 oz each)

  • ½ cup coconut milk (full-fat or light)

  • 1 tablespoon lime juice

  • 1 teaspoon lime zest

  • 1 teaspoon red curry paste

  • 1 teaspoon fish sauce (optional)

  • 1 teaspoon garlic powder

  • ½ teaspoon ginger powder (or 1 teaspoon grated fresh ginger)

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • Fresh cilantro, for garnish

  • Lime wedges, for serving



Instructions:


1. Prepare the Grouper:

  • Rinse the grouper fillets and pat them dry thoroughly with paper towels.


2. Make the Coconut Marinade:

  • In a small bowl, whisk together coconut milk, lime juice, lime zest, red curry paste, fish sauce (if using), garlic powder, ginger powder, salt, and pepper.


3. Marinate the Fish:

  • Place the fillets in a shallow dish and pour the marinade over them.

  • Let the grouper marinate in the refrigerator for 20-30 minutes to absorb the flavors.


4. Preheat the Air Fryer:

  • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.


5. Cook the Grouper:

  • Lightly spray the air fryer basket with cooking spray or line it with parchment paper.

  • Remove the fillets from the marinade, letting the excess drip off, and place them in a single layer in the basket.

  • Air fry at 375°F (190°C) for 8-10 minutes, flipping halfway through, until the fish is tender and flakes easily with a fork.


6. Serve:

  • Transfer the cooked grouper to a serving plate and garnish with fresh cilantro.

  • Serve immediately with lime wedges on the side.
