Air Fryer Pineapple Salsa Mahi-Mahi


Bright, tropical, and bursting with flavor, this Air Fryer Pineapple Salsa Mahi-Mahi is the perfect combination of sweet and savory. Air-fried to perfection and topped with a vibrant pineapple salsa, it’s a dish that feels like a getaway to the tropics.



Ingredients:


For the Mahi-Mahi:

  • 4 mahi-mahi fillets (about 6 oz each)

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • ½ teaspoon chili powder

  • ½ teaspoon salt

  • ½ teaspoon black pepper


For the Pineapple Salsa:

  • 1 cup fresh pineapple, diced

  • ½ cup red bell pepper, diced

  • ¼ cup red onion, finely chopped

  • 1 small jalapeño, minced (optional, for heat)

  • 2 tablespoons fresh cilantro, chopped

  • Juice of 1 lime

  • Salt and pepper, to taste



Instructions:


1. Prepare the Mahi-Mahi:

  • Rinse the mahi-mahi fillets and pat them dry thoroughly with paper towels.

  • In a small bowl, mix olive oil, garlic powder, smoked paprika, chili powder, salt, and black pepper. Brush this mixture evenly over both sides of the fillets.


2. Make the Pineapple Salsa:

  • In a medium bowl, combine pineapple, red bell pepper, red onion, jalapeño (if using), cilantro, and lime juice.

  • Season with salt and pepper to taste. Let the salsa rest while the fish cooks to allow the flavors to meld.


3. Preheat the Air Fryer:

  • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.


4. Cook the Mahi-Mahi:

  • Lightly spray the air fryer basket with cooking spray to prevent sticking.

  • Place the fillets in a single layer in the basket, leaving space between each piece. Cook in batches if necessary.

  • Air fry at 375°F (190°C) for 10-12 minutes, flipping halfway through. The fish should be tender, flaky, and slightly golden.


5. Serve:

  • Transfer the cooked mahi-mahi to serving plates. Spoon the pineapple salsa generously over the top. Serve immediately.

  • Fresh Pineapple: Use fresh pineapple for the salsa for the best flavor. If using canned, drain thoroughly to avoid excess liquid.
