Air Fryer Lemon Herb Butter Cod


Bright, buttery, and aromatic, this Air Fryer Lemon Herb Butter Cod is a simple yet elegant dish. Air-fried to tender perfection and drizzled with a luscious lemon herb butter, it’s a guaranteed crowd-pleaser.



Ingredients:


For the Cod:

  • 4 cod fillets (about 6 oz each)

  • 2 tablespoons olive oil

  • ½ teaspoon salt

  • ½ teaspoon black pepper


For the Lemon Herb Butter:

  • 3 tablespoons unsalted butter, melted

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon lemon zest

  • 1 clove garlic, minced

  • 1 tablespoon fresh parsley, chopped

  • 1 teaspoon fresh dill, chopped (optional)


For Garnish:

  • Lemon wedges

  • Fresh parsley



Instructions:


1. Prepare the Cod:

  • Rinse the cod fillets and pat them dry thoroughly with paper towels.

  • Brush both sides of the fillets with olive oil and season lightly with salt and pepper.


2. Preheat the Air Fryer:

  • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.


3. Cook the Cod:

  • Lightly spray the air fryer basket with cooking spray to prevent sticking.

  • Place the cod fillets in a single layer in the basket. Cook in batches if necessary.

  • Air fry at 375°F (190°C) for 8-10 minutes, flipping halfway through. The fish should be flaky and cooked through.


4. Make the Lemon Herb Butter:

  • While the cod cooks, mix melted butter, lemon juice, lemon zest, garlic, parsley, and dill (if using) in a small bowl.


5. Serve:

  • Transfer the cooked cod to a serving plate. Drizzle the lemon herb butter generously over the fillets.

  • Garnish with additional parsley and serve immediately with lemon wedges.

  • Don’t Overcook: Cod cooks quickly, so check for doneness at the 8-minute mark to avoid drying out.

  • Fresh Herbs: Use fresh parsley and dill for the best flavor. If using dried herbs, reduce the quantity slightly.

  • Custom Flavors: Add a pinch of red pepper flakes to the butter for a slight kick or swap dill for thyme.
