Elevate your dinner with this Garlic Parmesan Crusted Cod. This recipe delivers a savory, golden crust with tender, flaky cod that’s quick and easy to prepare in the air fryer.



Ingredients:

  • 4 cod fillets (about 6 oz each)

  • ½ cup grated Parmesan cheese

  • ½ cup panko breadcrumbs

  • 2 tablespoons fresh parsley, chopped (or 1 teaspoon dried parsley)

  • 1 teaspoon garlic powder

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 2 tablespoons olive oil

  • Lemon wedges, for serving



Instructions:


1. Prepare the Cod:

  • Rinse the cod fillets and pat them dry thoroughly with paper towels.

  • Lightly brush each fillet with olive oil to help the coating adhere.


2. Make the Parmesan Coating:

  • In a shallow bowl, combine the Parmesan cheese, panko breadcrumbs, parsley, garlic powder, paprika, salt, and black pepper. Mix well to distribute the seasonings evenly.


3. Coat the Cod Fillets:

  • Press each cod fillet into the Parmesan mixture, coating both sides evenly. Gently press the coating onto the fish to ensure it sticks.


4. Preheat the Air Fryer:

  • Preheat your air fryer to 400°F (200°C) for 3-5 minutes. Preheating ensures even cooking and a crisp crust.


5. Cook the Cod:

  • Lightly spray the air fryer basket with cooking spray or line it with parchment paper.

  • Place the coated cod fillets in a single layer in the basket, leaving space between each piece for proper air circulation.

  • Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through. The crust should be golden and crispy, and the fish should flake easily with a fork.


6. Serve:

  • Carefully remove the cod fillets from the air fryer and transfer to serving plates.

  • Serve immediately with lemon wedges for squeezing over the fish.

  • Fresh Parmesan: Grate your own Parmesan for the best flavor and texture. Pre-grated cheese can be too powdery for this recipe.
