Tender zucchini boats filled with savory sausage, herbs, and cheese make these Air Fryer Sausage-Stuffed Zucchini Boats a hearty and satisfying dish. Perfect for a low-carb meal or as a flavorful side dish, they’re simple and delicious.



Ingredients:

  • 2 medium zucchinis, halved lengthwise and seeds scooped out

  • 1/2 lb ground sausage (Italian or breakfast sausage works best)

  • 1/4 cup breadcrumbs (optional for added texture)

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup shredded mozzarella cheese (plus extra for topping)

  • 1 clove garlic, minced

  • 1 teaspoon Italian seasoning

  • Salt and black pepper to taste


Optional Garnish:

  • Chopped fresh parsley

  • Crushed red pepper flakes



Kitchen Tools Needed:

  • Air fryer

  • Spoon (for scooping zucchini)

  • Large mixing bowl

  • Measuring cups and spoons



Preparation Steps:


Prepare the Zucchini:

  1. Wash the zucchinis and pat them dry. Cut them in half lengthwise and use a spoon to scoop out the seeds, creating a hollow space for the filling.

  2. Lightly season the zucchini halves with salt and pepper.


Make the Filling:

  1. In a large mixing bowl, combine the ground sausage, breadcrumbs (if using), Parmesan cheese, mozzarella cheese, garlic, Italian seasoning, salt, and black pepper. Mix until well incorporated.


Stuff the Zucchini:

  1. Spoon the sausage mixture into the hollowed-out zucchinis, packing it in firmly but not overflowing.



Air Frying Steps:

  1. Preheat: Preheat your air fryer to 375°F for 3–5 minutes.

  2. Load the Basket: Place the stuffed zucchinis in the air fryer basket, ensuring they’re arranged in a single layer and not touching.

  3. Cook the Zucchini Boats: Air fry at 375°F for 10–12 minutes.

  4. Add Cheese and Finish: Sprinkle additional mozzarella cheese on top of each zucchini boat and air fry for another 2–3 minutes, until the cheese is melted and bubbly.



Serving Suggestions:

  • Serve as a main dish with a side salad or garlic bread.

  • Pair with roasted vegetables or mashed cauliflower for a low-carb meal.

  • Drizzle with marinara sauce for an Italian-inspired twist.
