Ingredients:

  • 4 medium bell peppers (any color)

  • 1/2 lb ground sausage (Italian, breakfast, or your preferred type)

  • 1 cup cooked rice (white, brown, or cauliflower rice for a low-carb option)

  • 1/2 cup diced tomatoes (canned or fresh)

  • 1/2 cup shredded mozzarella cheese (plus extra for topping)

  • 1/4 cup grated Parmesan cheese

  • 1 clove garlic, minced

  • 1 teaspoon Italian seasoning

  • Salt and black pepper to taste

Optional Garnish:

  • Fresh parsley or basil, chopped

Kitchen Tools Needed:

  • Air fryer

  • Large mixing bowl

  • Knife and spoon (for prepping peppers)

  • Measuring cups and spoons

Preparation Steps:

Prepare the Bell Peppers:

  1. Wash the bell peppers and slice off the tops. Remove the seeds and membranes inside.

  2. Lightly season the insides of the peppers with salt and pepper. Set aside.

Make the Filling:

  1. In a large mixing bowl, combine the ground sausage, cooked rice, diced tomatoes, mozzarella cheese, Parmesan cheese, garlic, Italian seasoning, salt, and pepper. Mix until well combined.

Stuff the Peppers:

  1. Spoon the sausage mixture into each bell pepper, packing it in tightly but leaving a little room at the top for melting cheese.

Air Frying Steps:

  1. Preheat: Preheat your air fryer to 375°F for 3–5 minutes.

  2. Load the Basket: Arrange the stuffed peppers in the air fryer basket, ensuring they’re upright and not touching.

  3. Cook the Peppers: Air fry at 375°F for 10–12 minutes.

  4. Add Cheese and Finish: Sprinkle additional mozzarella cheese on top of each pepper and air fry for another 2–3 minutes, until the cheese is melted and bubbly.

Serving Suggestions:

  • Serve with a side salad and garlic bread for a complete meal.

  • Pair with roasted vegetables or a light soup for a balanced dinner.

  • Garnish with fresh parsley or basil for added color and flavor.
