Air Fryer Coconut Crusted Pollock with Lime


Give your meal a tropical twist with this Air Fryer Coconut Crusted Pollock. The crunchy coconut coating pairs perfectly with a zesty lime kick, creating a light and flavorful dish that’s easy to make in the air fryer.


Ingredients:

  • 4 pollock fillets (about 6 oz each)

  • ½ cup shredded unsweetened coconut

  • ½ cup panko breadcrumbs

  • 2 tablespoons all-purpose flour

  • 2 large eggs, beaten

  • 1 teaspoon garlic powder

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • Zest of 1 lime

  • Cooking spray

  • Lime wedges, for serving



Instructions:

1. Prepare the Pollock:

  • Rinse the pollock fillets and pat them dry thoroughly with paper towels.

  • Trim any uneven edges if needed to ensure even cooking.


2. Make the Coconut Coating:

  • In a shallow dish, mix shredded coconut, panko breadcrumbs, lime zest, garlic powder, paprika, salt, and black pepper.

  • Place the flour in a second shallow dish.

  • Beat the eggs in a third dish.


3. Coat the Fillets:

  • Lightly dredge each fillet in the flour, shaking off the excess.

  • Dip into the beaten eggs, ensuring an even coating.

  • Press the fillets into the coconut mixture, covering both sides completely. Gently press to adhere the coating.


4. Preheat the Air Fryer:

  • Preheat your air fryer to 375°F (190°C) for 3-5 minutes. Preheating ensures even cooking.


5. Cook the Pollock:

  • Lightly spray the air fryer basket with cooking spray to prevent sticking.

  • Arrange the coated fillets in a single layer in the basket, leaving space between each piece for proper air circulation.

  • Air fry at 375°F (190°C) for 12-14 minutes, flipping halfway through. The coating should be golden brown and the fish should flake easily with a fork.


6. Serve:

  • Remove the pollock from the air fryer and transfer to serving plates.

  • Serve immediately with lime wedges for squeezing over the fish.

  • Coconut Texture: Use finely shredded coconut for better adherence to the fillets. Coarser coconut may fall off during cooking.

  • Crispier Coating: Lightly spray the tops of the coated fillets with cooking spray before air frying.
